I bought a box of Fiber One Honey Clusters cereal about a week ago. One of the ingredients listed was "inulin". I looked it up in the dictionary. The definition is "A carbohydrate found in the roots of many plants and used to manufacture fructose." Does anybody know why this would be in my cereal? What about the effects it would have on a person who has anxiety? Does it work the same as sugar, or is it totally unrelated? Anybody know anything about this? I'd never heard of it before. Confused

The following article from the University of Nebraska should help you understand more about inulin: http://ard.unl.edu/rn/0998/chicory.html
